Gluten-Free Stuffing for Thanksgiving

I'm always looking for delicious gluten-free versions of classic dishes. Yesterday, the NY Times offered up 5 gluten-free stuffing recipes for Thanksgiving.

If you're gluten-free, or are expecting any g-free dinner guests, one of these recipes might be up your alley. I've long struggled to find an adequate replacement for traditional stuffing, especially since rice bread tends to be heavy and absorbent, a far cry from the fluffy wheat stuffing I grew up on. I'm excited to try a different approach this year.
