Eat Gluten-Free in Italy!

I haven't been to Italy since my honeymoon 8 years ago. That was when I gained 10 pounds in 3 weeks on pasta and bread before realizing I was gluten-intolerant. Since then, I've longed to go back but hesitated, worried that I wouldn't be able to eat anything and would have to repeatedly "cheat" or feel very hungry.

So I was thrilled to read this article today detailing how well-versed Italians are in Celiac Disease. Evidently, precisely because the Italian diet is so gluten-heavy (pizza, pasta, bread), there is a high rate of Celiac Disease there. So Italians understand gluten-intolerance and make/sell products that are consciously gluten-free. Molto buono. Italy, here I come!
